Wonton Soup 

Dumpling soups have been popular throughout China for centuries. A wonton is a dumpling composed of a thin dough wrapper filled with ground pork or shrimp, spices, and often chopped scallions. Wontons may be boiled or deep-fried, and are served in a clear soup with noodles, scallions, and/or other vegetables such as bok choy or mushrooms.

Ingredients

  • 4 dried mushrooms
  • 8 oz (225 g) shrimp, peeled, deveined, and finely chopped
  • 8 oz (225 g) pork, minced
  • 1 tsp (5 ml) salt
  • 1 Tbsp (15 ml) soy sauce
  • 1 tsp (5 ml) sesame oil
  • 6 scallions, finely chopped and divided
  • 1 tsp (5 ml) fresh ginger, grated
  • 2 Tbsp (30 ml) water chestnuts, finely chopped
  • 1 package (8 oz/225 g) wonton wrappers
  • 5 cups (1.2 l) chicken or beef stock

Directions

  1. Place mushrooms in a bowl, add hot water to cover, and let soak for 20 minutes.
  2. Drain mushrooms, remove stems, and chop finely.
  3. Place mushrooms, shrimp, pork, salt, soy sauce, sesame oil, two scallions, ginger, and water chestnuts in a large bowl, mixing until well combined.
  4. Place 1 teaspoon (5 ml) of the filling in the center of each wonton wrapper.
  5. Moisten wrapper edges, fold it in half diagonally, and pinch together to seal filling inside.
  6. Bring chicken or beef stock to a boil in a large pot.
  7. Boil wontons for 4–5 minutes and then remove them from the pot.
  8. Garnish wontons with the four remaining scallions and serve.
