Wonton Soup
Dumpling soups have been popular throughout China for centuries. A wonton is a dumpling composed of a thin dough wrapper filled with ground pork or shrimp, spices, and often chopped scallions. Wontons may be boiled or deep-fried, and are served in a clear soup with noodles, scallions, and/or other vegetables such as bok choy or mushrooms.

Ingredients
- 4 dried mushrooms
- 8 oz (225 g) shrimp, peeled, deveined, and finely chopped
- 8 oz (225 g) pork, minced
- 1 tsp (5 ml) salt
- 1 Tbsp (15 ml) soy sauce
- 1 tsp (5 ml) sesame oil
- 6 scallions, finely chopped and divided
- 1 tsp (5 ml) fresh ginger, grated
- 2 Tbsp (30 ml) water chestnuts, finely chopped
- 1 package (8 oz/225 g) wonton wrappers
- 5 cups (1.2 l) chicken or beef stock
Directions
- Place mushrooms in a bowl, add hot water to cover, and let soak for 20 minutes.
- Drain mushrooms, remove stems, and chop finely.
- Place mushrooms, shrimp, pork, salt, soy sauce, sesame oil, two scallions, ginger, and water chestnuts in a large bowl, mixing until well combined.
- Place 1 teaspoon (5 ml) of the filling in the center of each wonton wrapper.
- Moisten wrapper edges, fold it in half diagonally, and pinch together to seal filling inside.
- Bring chicken or beef stock to a boil in a large pot.
- Boil wontons for 4–5 minutes and then remove them from the pot.
- Garnish wontons with the four remaining scallions and serve.
