Stir-Fried Greens
In China, a dish of stir-fried greens is a common accompaniment to most meals. Chinese cabbage, bok choy, or spinach can be used. The other ingredients in this dish create a balance of salty, spicy, and sweet flavors.

Ingredients
- 1 head chinese cabbage (pe-tsai), shredded
- 3 Tbsp (45 ml) peanut oil
- 1 garlic clove, minced
- Salt, to taste
- Ground sichuan hot pepper, to taste
- 1 tsp (5 ml) brandy
- 1 tsp (5 ml) sugar
Directions
- Bring a pot of water to a boil.
- Blanch cabbage for a few minutes and then drain.
- Pour peanut oil into a skillet set over medium-high heat.
- Add garlic and sauté until browned.
- Add cabbage, salt, and ground Sichuan hot pepper, sautéing for 1 minute.
- Combine brandy and sugar in a small bowl, stirring until sugar dissolves.
- Add brandy-sugar mixture to cabbage, stirring for 1 minute.
- Serve immediately.
