Ingredients

  • 1 head chinese cabbage (pe-tsai), shredded
  • 3 Tbsp (45 ml) peanut oil
  • 1 garlic clove, minced
  • Salt, to taste
  • Ground sichuan hot pepper, to taste
  • 1 tsp (5 ml) brandy
  • 1 tsp (5 ml) sugar

Directions

  1. Bring a pot of water to a boil.
  2. Blanch cabbage for a few minutes and then drain.
  3. Pour peanut oil into a skillet set over medium-high heat.
  4. Add garlic and sauté until browned.
  5. Add cabbage, salt, and ground Sichuan hot pepper, sautéing for 1 minute.
  6. Combine brandy and sugar in a small bowl, stirring until sugar dissolves.
  7. Add brandy-sugar mixture to cabbage, stirring for 1 minute.
  8. Serve immediately.
