Toon Leaf Salad

Known as a tree vegetable, toon leaves are springtime favorites. The new buds, shoots, and young leaves are handpicked and sautéed for their healing properties and fragrant flavor, which is said to resemble that of leeks. The Chinese do not favor raw salads; instead, purplish-green toon leaves are chopped, then lightly sautéed in soy sauce and rice wine.

Ingredients

  • 1 Tbsp (15 ml) peanut oil
  • 2 garlic cloves, chopped
  • 4 cups (100 g) chopped toon leaves
  • 2 Tbsp (30 ml) soy sauce
  • 1 Tbsp (15 ml) rice wine
  • ½ tsp (2.5 ml) salt

Directions

  1. Pour peanut oil into a wok or skillet set over medium-high heat.
  2. Add garlic to the hot oil and sauté until it becomes golden, about 3 minutes.
  3. Add toon leaves and stir-fry for 2 minutes.
  4. Stir in soy sauce, rice wine, and salt, cooking for 3 minutes.
  5. Serve immediately.
