Toon Leaf Salad
Known as a tree vegetable, toon leaves are springtime favorites. The new buds, shoots, and young leaves are handpicked and sautéed for their healing properties and fragrant flavor, which is said to resemble that of leeks. The Chinese do not favor raw salads; instead, purplish-green toon leaves are chopped and then lightly sautéed in soy sauce and rice wine.
