Cold Noodles with Peanut Sauce

It is a Chinese custom to eat long noodles on one's birthday because they represent longevity. In addition to noodles, this salad is tossed in a sauce made of peanut butter, sesame oil, and soy sauce for a balance of flavors. Serve these noodles cold or at room temperature.

Ingredients

  • 2 Tbsp (30 ml) smooth peanut butter
  • ¼ cup (60 ml) hot water
  • 3 Tbsp (45 ml) soy sauce
  • 1 tsp (5 ml) toasted sesame oil
  • 2 lbs (907 g) dried buckwheat noodles
  • 2 scallions, cut into ½-inch (1.25-cm) pieces
  • Mung bean sprouts, as needed for garnish
  • Chopped peanuts, as needed for garnish

Directions

  1. Combine peanut butter and hot water, stirring until creamy.
  2. Stir in soy sauce and sesame oil. Set aside.
  3. Boil and drain noodles.
  4. Add noodles to peanut butter mixture, tossing well to combine.
  5. Refrigerate until cold and ready to serve.
  6. Garnish cold noodles with scallions, sprouts, and chopped peanuts.
