Youtiao (Fried Dough Sticks)
Youtiao, also known as fried dough sticks, are light, airy, and crispy snacks that are a beloved staple in Chinese breakfast culture. Often paired with soy milk or rice porridge, youtiao offers a delightful combination of crispiness and chewiness. Originating centuries ago, this dish has become a symbol of simplicity and comfort in Chinese households and street food markets. Known for their golden-brown exterior and subtle salty flavor, youtiao are made by deep-frying strips of dough until they puff up. Ingredients
- 2 cups (250 g) all-purpose flour
- 1 tsp (5 g) baking powder
- ½ tsp (2 g) baking soda
- ½ tsp (2 g) salt
- 1 Tbsp (15 g) sugar
- ¾ cup (180 ml) warm water
- 1 Tbsp (15 ml) vegetable oil
- 3–4 cups (750 ml–1 liter) vegetable oil
Directions
- In a mixing bowl, combine flour, baking powder, baking soda, salt, and sugar.
- Gradually add warm water while mixing with a spoon or your hands until a shaggy dough forms.
- Add vegetable oil and knead the dough for 8–10 minutes until it becomes smooth and elastic.
- Cover the dough with a damp cloth or plastic wrap and let it rest at room temperature for 60–90 minutes.
- Lightly dust a clean surface with flour and roll out the dough into a long rectangle about ¼ inch (6 mm) thick.
- Cut the dough into strips about 1 inch (2.5 cm) wide and 4 inches (10 cm) long.
- Place one strip on top of another to make pairs, gently pressing them together in the center with a chopstick to bond.
- In a deep pan or wok, heat vegetable oil over medium heat to 350°F (180°C).
- To test the oil, drop a small piece of dough into it; it should sizzle and float to the top.
- Carefully stretch each pair of dough strips slightly before placing them into the hot oil.
- Fry the youtiao for 2–3 minutes, turning occasionally, until golden brown and puffed.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm with soy milk, congee, or as a standalone snack.
Notes
- Youtiao is traditionally not sweet but can be paired with sweet dips or drizzled with honey for a different flavor.
- For variations, can add sesame seeds or sprinkle a touch of spice to the dough before frying.
- Leftover youtiao can be reheated in an oven or air fryer to restore crispiness.
