Tofu with Crab Meat and Scallions

Tofu has been a nutritious staple in China for centuries and was served to the emperor on the first day of Chinese New Year to symbolize purification. Tofu is versatile in its many forms, from soft to extra firm, and a variety of dried forms. This silky soft tofu dish is stir-fried with crab meat and scallions and bathed in a soy-oyster sauce.

Ingredients

  • 2 tsp (10 ml) cornstarch
  • 2 Tbsp (30 ml) water
  • 2 Tbsp (30 ml) peanut oil
  • 2 garlic cloves, chopped
  • 1 small onion, chopped
  • 1 Tbsp (15 ml) grated ginger
  • 1 cup (125 g) crabmeat
  • 2 Tbsp (30 ml) soy sauce
  • 1 Tbsp (15 ml) hoisin sauce
  • ½ tsp (2.5 ml) salt
  • 2 cups (453 g) or 1 package soft tofu, cubed
  • ¼ cup (60 g) chopped green onions
  • Cooked rice, as needed for serving

Directions

  1. Place cornstarch and water in a small bowl, stirring to dissolve, and set aside.
  2. Pour peanut oil into a skillet set over medium-high heat.
  3. Add garlic, onion, and ginger, sautéing for 3 minutes.
  4. Add crabmeat and sauté for 2 minutes.
  5. Stir in cornstarch mixture, soy sauce, hoisin sauce, and salt.
  6. Simmer for 5 minutes until sauce thickens.
  7. Add tofu and cook for 5 minutes.
  8. Garnish with green onions and serve hot with cooked rice.
