Seafood Hot Pot
Seafood hot pot is a hearty, warming dish that is relished on cold evenings. A pot of simmering broth sits on a burner on the dining table. Diners drop into the hot pot selections from a smorgasbord of seafood, vegetables, and noodles. The broth is continually flavored and thickened as more items are cooked.

Ingredients
- 3 Tbsp (15 ml) vegetable oil
- 1 piece (½ inch or 1.3 cm) fresh ginger, chopped
- 2 medium shallots, chopped
- 4 cups (950 ml) water
- Salt, to taste
- 2 Tbsp (30 ml) fresh lemon juice
- 3 cups (408 g) cubed fish fillets
- 2 cups (650 g) shrimp
- 1 cup (150 g) green beans, broken up into 2-inch lengths
- 1 cup (225 g) spinach
- 3 cups (300 g) vermicelli, prepared al dente per package instructions
- 4 Tbsp (60 ml) soy sauce
- ½ cup (25 g) fresh coriander leaves, chopped
Directions
- Pour vegetable oil into a 4-quart pot set over medium-high heat.
- Add ginger and shallots to the hot oil, sautéing for 2 minutes
- Add water, salt, and lemon juice.
- Bring to a boil, reduce heat, and simmer.
- Place the pot of broth over low heat on a single burner in the center of dining table with dishes of raw ingredients (fish, shrimp, green beans, spinach, and vermicelli) around the hot pot.
- Give each person individual dipping dishes of soy sauce and coriander leaves.
- Place items in the hot pot and retrieve them when cooked.
