Peach Gum Dessert Soup

Peach gum dessert soup is a traditional Chinese sweet soup known for its nourishing properties and delicate taste. Peach gum, the natural resin from peach trees, is prized for its health benefits, including skin nourishment and improved digestion. This dessert often includes a combination of longan, jujubes, lotus seeds, and goji berries, creating a harmony of textures and natural sweetness. Ingredients

  • 1.5 oz (40 g) dried peach gum
  • 2 oz (60 g) lotus seeds, soaked and cores removed (optional)
  • 2 oz (60 g) dried longan
  • 1 oz (30 g) jujubes (red dates), pitted and halved
  • 8 cups (2 L) water
  • ½ cup (120 ml) rock sugar, or to taste
  • 1 Tbsp (15 g) goji berries

Directions

  1. Rinse the dried peach gum under cold water to remove any impurities. Then soak the gum in plenty of water for 12 hours or overnight until it softens and expands.
  2. Soak the lotus seeds for 2 hours (if using) and remove their bitter green cores.
  3. After soaking, drain and carefully remove any remaining impurities or hardened particles from the softened peach gum. Set aside.
  4. In a large pot, bring 8 cups (2 liters) of water to a boil.
  5. Add the longan, jujubes, peach gum, and soaked lotus seeds (if using). Lower the heat to a simmer.
  6. Simmer for 45 minutes, stirring occasionally to prevent sticking.
  7. Add the rock sugar to the pot, stirring until fully dissolved. Adjust sweetness to taste.
  8. Add the goji berries and simmer for an additional 5 minutes.
  9. Ladle the soup into bowls and serve warm or chilled, depending on preference.

Notes

  • Refrigerate any leftovers and consume within 2–3 days.
