Mantou (Chinese Steamed Buns)
Made from a basic yeasted dough, mantou (Chinese steamed buns) have a light and fluffy texture that makes for a simple but highly versatile bread. Mantou are enjoyed fresh and warm, filled with sweet or savory fillings, dipped into chocolate or butterscotch sauce, or lightly fried in golden aromatic butter (similar to French beurre noisette).

Ingredients
- 1 tsp (5 ml) active dried yeast
- 1 Tbsp (15 ml) sugar
- ½ cup (120 ml) warm water
- 1 cup (120 g) all-purpose flour, more as needed
- ¼ tsp (1.25 g) salt
- ½ tsp (2.5 ml) vegetable oil
- 1 Tbsp (15 ml) water
Directions
- Combine yeast, sugar, and warm water in a small bowl, stirring to dissolve, and let rest for 5 minutes.
- Sift together flour and salt into a mixing bowl.
- Make a well in the center of flour mixture and add vegetable oil and yeast mixture, stirring to make a stiff dough.
- Knead dough on a floured surface for 10–12 minutes until smooth and elastic.
- Cover dough and let it rest for 10 minutes.
- Roll out dough into a large rectangle.
- Fold dough into thirds by folding one-third to the center and the remaining third on top.
- Roll out dough into a rectangle, brush water over the surface, roll up tightly into a log, and cut into eight pieces.
- Place buns on the tray of a steamer, cover, and let rise for 20 minutes.
- Heat steamer, cover, and steam buns for 20 minutes.
