Laobing (Pan-Fried Flatbread)

Laobing is a thick, chewy pan-fried flatbread that is a staple in northern Chinese cuisine. Known for its rustic simplicity, it is typically made from basic ingredients like flour, water, and oil, showcasing the ingenuity of traditional Chinese cooking. Often paired with stews, soups, or stir-fried dishes, laobing is versatile and satisfying. Its golden, crispy exterior and soft interior make it a comforting accompaniment to hearty meals or a standalone snack.

Ingredients

  • 3 cups (375 g) all-purpose flour
  • 1 tsp (5 g) salt
  • 1 cup (240 ml) warm water
  • 3 Tbsp (45 ml) vegetable oil, divided (for frying)
Optional Seasonings:
  • 1 Tbsp (8 g) sesame seeds
  • ½ tsp (2 g) five-spice powder
  • 1 tsp (5 g) chopped fresh scallions

Directions

  1. In a large mixing bowl, combine the flour and salt.
  2. Gradually add warm water while stirring with a spoon or chopsticks until the dough comes together.
  3. Knead the dough on a floured surface for 8–10 minutes until it is smooth and elastic.
  4. Cover the dough with a damp cloth or plastic wrap and let it rest for 1 hour.
  5. Divide the dough into 4 equal portions.
  6. Roll each portion into a ball and then flatten it into a round disc about 6 inches (15 cm) in diameter.
  7. If using optional seasonings, sprinkle them onto the rolled-out dough and press gently to adhere.
  8. Heat 1 tablespoon (15 ml) of vegetable oil in a non-stick skillet or cast-iron pan over medium heat.
  9. Place one dough disc in the skillet and cook for 3–4 minutes, or until the bottom is golden brown and crispy.
  10. Flip the bread and cook the other side for another 3–4 minutes, pressing gently with a spatula to ensure even cooking.
  11. Repeat with the remaining dough, adding more oil as needed.
  12. Serve the laobing warm, alongside stews, soups, or stir-fries, or enjoy it as a snack with a dipping sauce.

Notes

  • For a flakier texture, you can brush the dough with oil before rolling it out.
  • Adjust the thickness of the bread based on your preference—thinner bread will be crispier, while thicker bread will be chewier.
  • Store leftovers in an airtight container and reheat by pan-frying or toasting.
