Laobing is a thick, chewy pan-fried flatbread that is a staple in northern Chinese cuisine. Ingredients
- 3 cups (375 g) all-purpose flour
- 1 tsp (5 g) salt
- 1 cup (240 ml) warm water
- 3 Tbsp (45 ml) vegetable oil, divided (for frying)
- 1 Tbsp (8 g) sesame seeds
- ½ tsp (2 g) five-spice powder
- 1 tsp (5 g) chopped fresh scallions
Directions
- In a large mixing bowl, combine the flour and salt.
- Gradually add warm water while stirring with a spoon or chopsticks until the dough comes together.
- Knead the dough on a floured surface for 8–10 minutes until it is smooth and elastic.
- Cover the dough with a damp cloth or plastic wrap and let it rest for 1 hour.
- Divide the dough into 4 equal portions.
- Roll each portion into a ball and then flatten it into a round disc about 6 inches (15 cm) in diameter.
- If using optional seasonings, sprinkle them onto the rolled-out dough and press gently to adhere.
- Heat 1 tablespoon (15 ml) of vegetable oil in a non-stick skillet or cast-iron pan over medium heat.
- Place one dough disc in the skillet and cook for 3–4 minutes, or until the bottom is golden brown and crispy.
- Flip the bread and cook the other side for another 3–4 minutes, pressing gently with a spatula to ensure even cooking.
- Repeat with the remaining dough, adding more oil as needed.
- Serve the laobing warm, alongside stews, soups, or stir-fries, or enjoy it as a snack with a dipping sauce.
Notes
- For a flakier texture, you can brush the dough with oil before rolling it out.
- Adjust the thickness of the bread based on your preference—thinner bread will be crispier, while thicker bread will be chewier.
- Store leftovers in an airtight container and reheat by pan-frying or toasting.
