Hua Juan (Twisted Flower Rolls)
Hua juan, or twisted flower rolls, are a type of steamed Chinese bread known for their intricate shape and delightful flavor. Ingredients
- 3 cups (375 g) all-purpose flour
- 1 tsp (5 g) instant yeast
- 1 Tbsp (15 g) sugar
- ½ tsp (2 g) salt
- 1 cup (240 ml) warm water
- 2 Tbsp (30 ml) sesame oil
- 4 tbsp (30 g) finely chopped scallions
- ½ tsp (2 g) salt
- ½ tsp (2 g) five-spice powder (optional)
Directions
- In a large mixing bowl, combine the flour, yeast, sugar, and salt.
- Gradually add warm water while mixing until a soft, smooth dough forms.
- Knead the dough for 8–10 minutes on a lightly floured surface until it becomes elastic and smooth.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it proof in a warm place for 60–90 minutes, or until doubled in size.
- In a small bowl, mix sesame oil, chopped scallions, salt, and five-spice powder (if using). Set aside.
- Punch down the dough and divide it into two equal portions.
- Roll out one portion of dough into a thin rectangle (about 12 x 8 inches/30 x 20 cm).
- Spread half of the scallion filling evenly over the surface.
- Roll the dough tightly into a log, starting from the long side, and pinch the seam to seal.
- Cut the log into 4–5 equal pieces. Take each piece, pinch the ends together, and twist it several times to form a spiral or flower shape.
- Repeat with the remaining dough and filling.
- Place the shaped rolls on small parchment squares or directly in a lightly greased steamer basket.
- Cover with a damp cloth and let the rolls proof for 20–30 minutes until slightly puffed.
- Bring water to a boil in a steamer. Place the rolls in the steamer, leaving space between them to expand.
- Steam over medium heat for 15 minutes.
- Turn off the heat and let the rolls sit in the steamer for 2 minutes before removing to prevent collapsing.
- Serve warm as a snack or with soup or stir-fried vegetables.

- The filling can be further customized with minced garlic, black sesame seeds, or chili flakes for added flavor.
- For a slightly sweet version, replace the scallion filling with sugar and cinnamon.
