Hua Juan (Twisted Flower Rolls)

Hua juan, or twisted flower rolls, are a type of steamed Chinese bread known for their intricate shape and delightful flavor. These rolls are soft and fluffy, with a light savory filling often made with scallions and sesame oil, creating a fragrant and aromatic treat. Originating from northern China, where wheat-based dishes are staples, hua juan showcases the artistry and craftsmanship of traditional Chinese cooking. Ingredients

    Dough:
    • 3 cups (375 g) all-purpose flour
    • 1 tsp (5 g) instant yeast
    • 1 Tbsp (15 g) sugar
    • ½ tsp (2 g) salt
    • 1 cup (240 ml) warm water
    Filling:
    • 2 Tbsp (30 ml) sesame oil
    • 4 tbsp (30 g) finely chopped scallions
    • ½ tsp (2 g) salt
    • ½ tsp (2 g) five-spice powder (optional)

    Directions

      Prepare the Dough:
    1. In a large mixing bowl, combine the flour, yeast, sugar, and salt.
    2. Gradually add warm water while mixing until a soft, smooth dough forms.
    3. Knead the dough for 8–10 minutes on a lightly floured surface until it becomes elastic and smooth.
    4. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it proof in a warm place for 60–90 minutes, or until doubled in size.
    5. Prepare the Filling:
    6. In a small bowl, mix sesame oil, chopped scallions, salt, and five-spice powder (if using). Set aside.
    7. Make the Hua Juan:
    8. Punch down the dough and divide it into two equal portions.
    9. Roll out one portion of dough into a thin rectangle (about 12 x 8 inches/30 x 20 cm).
    10. Spread half of the scallion filling evenly over the surface.
    11. Roll the dough tightly into a log, starting from the long side, and pinch the seam to seal.
    12. Cut the log into 4–5 equal pieces. Take each piece, pinch the ends together, and twist it several times to form a spiral or flower shape.
    13. Repeat with the remaining dough and filling.
    14. Place the shaped rolls on small parchment squares or directly in a lightly greased steamer basket.
    15. Cover with a damp cloth and let the rolls proof for 20–30 minutes until slightly puffed.
    16. Bring water to a boil in a steamer. Place the rolls in the steamer, leaving space between them to expand.
    17. Steam over medium heat for 15 minutes.
    18. Turn off the heat and let the rolls sit in the steamer for 2 minutes before removing to prevent collapsing.
    19. Serve warm as a snack or with soup or stir-fried vegetables.

    Notes

    • The filling can be further customized with minced garlic, black sesame seeds, or chili flakes for added flavor.
    • For a slightly sweet version, replace the scallion filling with sugar and cinnamon.
    • Store leftovers in an airtight container and reheat by steaming or microwaving.
