Fried Rice

There are as many varieties of fried rice as there are ingredients. Fried rice commonly contains eggs, vegetables, and/or meat, and is usually stir-fried in a wok. The recipe below is a very simple version and is a great way to use up leftover rice. Leftover rice has less moisture, making it better for frying.

Ingredients

  • 4 cups (1 kg) cold cooked rice
  • 4 Tbsp (60 ml) vegetable oil
  • 3 beaten eggs
  • Salt, to taste
  • Ground black pepper, to taste
  • 1 scallion, finely chopped

Directions

  1. Break lumps of cooked rice into individual grains.
  2. Pour oil into a wok set over medium-high heat.
  3. Add rice to the hot oil and stir-fry until heated through.
  4. Make a well in the center of the rice and pour in beaten eggs.
  5. Stir eggs until scrambled and then blend with rice.
  6. Season with salt and pepper to taste.
  7. Stir-fry for 30 seconds.
  8. Garnish with scallion and serve hot.
