Cold Noodles with Peanut Sauce
It is a Chinese custom to eat long noodles on one's birthday because they represent longevity. In addition to noodles, this salad is tossed in a sauce made of peanut butter, sesame oil, and soy sauce for a balance of flavors. Serve these noodles cold or at room temperature.

Ingredients
- 2 Tbsp (30 ml) smooth peanut butter
- ¼ cup (60 ml) hot water
- 3 Tbsp (45 ml) soy sauce
- 1 tsp (5 ml) toasted sesame oil
- 2 lbs (907 g) dried buckwheat noodles
- 2 scallions, cut into ½-inch (1.25-cm) pieces
- Mung bean sprouts, as needed for garnish
- Chopped peanuts, as needed for garnish
Directions
- Combine peanut butter and hot water, stirring until creamy.
- Stir in soy sauce and sesame oil. Set aside.
- Boil and drain noodles.
- Add noodles to peanut butter mixture, tossing well to combine.
- Refrigerate until cold and ready to serve.
- Garnish cold noodles with scallions, sprouts, and chopped peanuts.
