Chow Mein
Chow mein means “fried noodles” in the Cantonese dialect. This delicious fast-food-style noodle dish is easy to make because it’s simply stir-fried vegetables with noodles. The popularity of this dish comes from its versatility; using whatever happens to be in the house transforms it into a new dish every time. While this recipe is vegetarian, meat-lovers can add cooked meat such as chicken, pork, or shrimp.

Ingredients
- 1 lb (453 g) dried chow mein noodles
- 2 Tbsp (30 ml) vegetable oil
- 3 garlic cloves, crushed
- 1 small shallot, chopped
- ½ cup (100 g) julienned carrot
- 1 cup (100 g) shredded green cabbage
- 1 cup (175 g) broccoli florets
- ½ cup (40 g) sliced mushrooms (button, shiitake)
- 1 cup (100 g) fresh bean sprouts
- 2 Tbsp (30 ml) tamari
- 2 Tbsp (30 ml) oyster sauce
- Salt, to taste
Directions
- Prepare packaged noodles according to instructions and keep warm.
- Pour vegetable oil into a large skillet set over medium-high heat, add garlic, and sauté until lightly golden.
- Add shallot and carrot, stir-frying for 2 minutes.
- Add cabbage and broccoli, stir-frying for 3 minutes or until cabbage wilts slightly.
- Add mushrooms, cooking for 2 minutes.
- Add bean sprouts, tamari, and oyster sauce, cooking for 1 minute.
- Season to taste with salt.
- Add noodles and mix well to combine.
- Serve hot.
