Chow Fun with Beef and Broccoli

Chow fun is a Cantonese dish containing fried noodles. However, these differ from chow mein noodles—which are typically made from wheat and egg—in that chow fun noodles are flat, wide, and made from rice flour. Chow fun is a quick and easy dish to make that incorporates a mélange of ingredients, from meat to seafood to fresh vegetables.

Ingredients

  • 1 cup (150 g) thinly sliced beef
  • 1 Tbsp (15 ml) sherry or rice wine
  • 1 Tbsp (15 ml) soy sauce
  • 1 tsp (5 ml) cornstarch
  • 1½ tsp (7.5 ml) salt, divided
  • Ground black pepper, to taste
  • 12 oz (300 grams) dried chow fun noodles
  • 3 Tbsp (45 ml) vegetable oil, divided
  • 2 cups (350 g) broccoli florets
  • 3 garlic cloves, crushed
  • 1 piece (½ inch or 1.3 centimeters) fresh ginger, chopped
  • ½ cup (50 g) sliced green onions
  • ½ cup (50 g) fresh bean sprouts

Directions

  1. Combine beef, rice wine, soy sauce, cornstarch, ½ teaspoon (2.5 ml) salt, and black pepper in a bowl.
  2. Cook chow fun noodles according to package instructions, separating strands.
  3. Heat 1 tablespoon (15 ml) vegetable oil in a skillet.
  4. Add broccoli, cover skillet, and cook for 2 minutes.
  5. Remove broccoli from pan.
  6. Heat 1 tablespoon (15 ml) vegetable oil in the skillet and sauté beef for 1 minute on each side.
  7. Remove beef from skillet and set aside.
  8. Heat remaining 1 tablespoon (15 ml) vegetable oil in the skillet and sauté garlic, ginger, and green onion for 2 minutes.
  9. Add noodles, broccoli, and beef, mixing well to combine. 
  10. Serve hot.

Notes

  • If noodles get sticky, add 1 tablespoon (15 ml) of toasted sesame oil, if desired.
