Baat Bo Fon (Rice Pudding)

Rice pudding is a globally popular dish that has unique variations for each country and region of the world in which it's eaten. Baat bo fon is a favorite treat for special occasions in China. This rice pudding may be made with white or brown rice, and is usually topped with cinnamon, whipped cream, or chopped nuts.

Ingredients

  • ¾ cup (140 g) glutinous rice
  • 1½ cups (350 ml) water
  • Pinch of salt
  • 1 quart (1 l) milk
  • ½ cup (100 g) sugar
  • ½ tsp (2.5 ml) vanilla extract

Directions

  1. Combine rice, water, and salt in a large pot and heat until almost boiling, stirring often.
  2. Reduce heat, cover, and simmer for 15 minutes until most of the water has been absorbed.
  3. Stir in milk and sugar.
  4. Cook, uncovered and stirring often, for 30–40 minutes, until mixture is thick.
  5. Stir in vanilla extract.
  6. Top with sliced almonds, whipped cream, or a sprinkle of cinnamon and serve.
