Baat Bo Fon (Rice Pudding)
Rice pudding is a globally popular dish that has unique variations for each country and region of the world in which it's eaten. Baat bo fon is a favorite treat for special occasions in China. This rice pudding may be made with white or brown rice, and is usually topped with cinnamon, whipped cream, or chopped nuts.

Ingredients
- ¾ cup (140 g) glutinous rice
- 1½ cups (350 ml) water
- Pinch of salt
- 1 quart (1 l) milk
- ½ cup (100 g) sugar
- ½ tsp (2.5 ml) vanilla extract
Directions
- Combine rice, water, and salt in a large pot and heat until almost boiling, stirring often.
- Reduce heat, cover, and simmer for 15 minutes until most of the water has been absorbed.
- Stir in milk and sugar.
- Cook, uncovered and stirring often, for 30–40 minutes, until mixture is thick.
- Stir in vanilla extract.
- Top with sliced almonds, whipped cream, or a sprinkle of cinnamon and serve.
